How to Cook Seafood Perfectly
Don’t overcook it. The single biggest mistake with seafood. Fish is done when it flakes easily at the thickest point. Shrimp is done when it turns pink and curls into a loose C-shape.
Pat it dry. Moisture is the enemy of a good sear. Pat seafood dry with paper towels before cooking for better browning and crispier skin.
Hot pan, not overcrowded. Cook seafood in a hot pan with enough space between pieces. Overcrowding steams instead of sears.
Season right before cooking. Salt draws out moisture. Season fish and shrimp right before it hits the pan.
Fresh or properly thawed. If using frozen seafood, thaw it overnight in the fridge — never in warm water, which degrades texture.
